Super-Easy Rolo Cupcakes


If you asked my husband, Chris, what his favorite dessert is, he would probably say plain, yellow cupcakes, made from a boxed cake mix.  That's right, no frosting, no chocolate chips, no nuts, nothing extra, just plain yellow cupcakes.

The other day he was cleaning out our pantry and refrigerator at the same time and he found boxes of cake mix in the pantry and a container of Rolos in the fridge.  Trying to clean out as much as he can, he decided to make some yellow cupcakes using one of the boxes of yellow cake mix and he also decided to put Rolos into the cupcake batter.

In the end, he gave me and the kids a very yummy dessert!  I hate to admit it, but I ate three cupcakes in one sitting!  But hey, there is no frosting, so there is less fat, right?!

To make your own cupcakes, just use a box of yellow cake mix, and when you scoop the batter into the muffin liners, gently push one Rolo in the center of each cupcake batter before you put it in the oven!  Or if you want, stick a few more Rolos in there!
