Mini Pumpkin Muffins


Have you been enjoying all of the pumpkin-flavored goodies this season?  I know I have!  Before Thanksgiving comes, I wanted to make some sort of pumpkin-flavored treat for our house.

Since my family loves muffins and have never tried making pumpkin muffins before, I decided to make some mini pumpkin muffins.  I found this super-easy recipe on Allrecipes.com and altered it slightly.  This recipe doesn't require any eggs or oil!  It sounds crazy, but trust the recipe.  The muffins come out soft and moist!

Ingredients:

1 (16.5 ounce) Package Yellow Cake Mix
 1 (15 ounce) Can Pumpkin Puree
1 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Nutmeg
1/4 Teaspoon Ground Cloves

Preheat the oven to 350 degrees F (175 degrees C). Grease mini muffin pans or line with paper liners.

In a large bowl, mix together the cake mix, pumpkin puree, cinnamon, nutmeg and cloves until smooth. Spoon equal amounts of batter into the prepared muffin cups.

Bake for 10 to 12 minutes in the preheated oven, until a toothpick inserted in the center of one comes out clean. 

Makes approximately 3 dozen mini muffins. 

When I asked Brody if he liked the pumpkin muffins, he said, "No, I don't like them, I LOVE them!"

Double Chocolate Chip Cookies with Reese's Pieces


Halloween was over a week ago and we still have a ton of candy left.  If you are like me, I put aside some candies that the kids don't like and start thinking of what else I can use them for.  Brody and Skylar are not huge fans of candies with peanut butter, so I put aside their Reese's Pieces and had a small stash...


Then I found this great recipe for Double Chocolate Dream Cookies from Nestle and thought it would be perfect for my Reese's Pieces!  This recipe would be great for any pieces of candy that you have laying around like M&Ms, Goobers, or any chopped up chocolate pieces.  Since my kids do not like Reese's Pieces, I baked half of the batch with just the chocolate chips, and I threw in the candy pieces for the second half of the batch.

Here is what you need:

2 1/4 cups all-purpose flour
1/2 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter or margarine, softened
1 cup packed brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs 
2 cups (12-oz pkg) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
Candy Pieces (I used 1/2 cup Reese's Pieces for half of the batch, but you can use as much or as little as you like!)
      
PREHEAT oven to 375° F.

COMBINE flour, cocoa, baking soda and salt in a small bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in a large mixing bowl until creamy. Beat in eggs for about 2 minutes or until light and fluffy. Gradually beat in flour mixture. Stir in morsels and candy pieces. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 8 to 10 minutes or until cookies are puffed. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
